    Ingredients

    2 lean, grass-fed 12-ounce New York strip steaks

    1 kosher salt tsp.

    1/4 cup black pepper

    Olive oil, 1 tbsp

    Butter, two tablespoons

    2 sprigs of thyme

    2 smashed garlic cloves

    Directions

    Step One
    A
    llow steaks to rest at room temperature for 30 minutes.

    Step Two
    Steaks should be evenly covered in salt and pepper. Ensure that a sizable cast-iron skillet is hot. Pour oil into the pan and stir to coat. Add the steaks to the pan and brown them for three minutes on each side. Turn down the heat to medium-low and stir in the butter, thyme, and garlic. Utilizing an oven mitt or a folded dish towel, carefully hold the pan handle. Cook for 1 1/2 minutes, basting steaks with butter continuously. Tilt pan toward you so butter pools. Take the steaks out of the pan and cover them with foil. Observe for ten minutes. Keep the butter mixture aside.

    Step Three
    Slice steak thinly by cutting it diagonally across the grain. With the thyme and garlic gone, add the steak to the reserved butter mixture.
