Creamy Chicken Noodle Soup with Rotisserie Chicken

This dish for Creamy Chicken Noodle Soup reminds me of a great pot pie. To reduce preparation time, we recommend using rotisserie Chicken; opt for a great, sizable one with plenty of breast meat on it. Green salad or, if you're really hungry, a grilled cheese sandwich go well with this hearty and simple soup dish.

How We Made Creamy Chicken Noodle Soup with Rotisserie Chicken Healthy

The words "creamy soup" and "healthy" don't frequently go together, but we succeeded in doing so in this recipe for rotisserie chicken soup without losing flavour. This is how:

    We Bulked Up on Veggies

Vegetables provide a soup taste and colour, as well as vitamins and fibre that is good for the heart. Five cups of peas, carrots, celery, and onions give our soup a tonne of flavour and substantial fibre.

    We Use Whole-Wheat Noodles

With a soup like this one, which is bursting with ingredients that go well with its nutty flavour, whole-wheat noodles are a terrific option. They increase the fibre in your food even more.

We Cut Back on Saturated Fat

The 2022–2025 Dietary Guidelines for Americans advise consuming no more than 10% of your daily calories from saturated fat. By omitting the heavy cream that traditionally gives creamy soup its silky texture and using whole milk instead, we keep saturated fat levels in check. While we still use butter to cook the vegetables in our soup, we also add olive oil, an unsaturated fat that may be beneficial for the health of our hearts.

    Ingredients

    • Unsalted butter, two teaspoons
    • Olive oil, 1 tbsp
    • two cups of yellow onion, diced (from 1 large onion)
    • 1 cup of carrots, chopped (from 2 medium carrots)
    • 1 cup of celery, chopped (from 2 large stalks)
    • Kosher salt, 1 3/4 teaspoons
    • 3 tablespoons of regular flour
    • 4 cups chicken stock without salt
    • two mugs of whole milk
    • Uncooked whole-wheat egg noodles weighing 4 ounces
    • 3 cups of rotisserie chicken breast, roughly chopped (from 2 rotisserie chickens)
    • 1 cup of green peas, frozen

    Directions

    Step; 1
Over medium-high heat, melt butter and olive oil in a big Dutch oven. Salt, onion, carrots, and celery can also be added. Cook, stirring frequently, for 6 to 8 minutes, or until veggies are slightly softened. Stir in the flour to coat. Add milk and broth, then stir as the mixture comes to a boil. To the boiling sauce, add the uncooked noodles. Noodles should be al dente after about 8 minutes of cooking under cover. After adding the chicken and peas, cook the pasta for a further 1 to 2 minutes, or until it is the desired doneness. Serve right away.

A qualified dietitian uses an ingredient database to estimate nutrition information, which means it should only be used as a guide.

The recommended daily intake of nutrients is known as Daily Values (DVs). You can find out how much a serving of a certain item or recipe contributes to each of those total suggested quantities by looking at the percent daily value (%DV) stated on nutrition labels. The daily value is determined by the Food and Drug Administration (FDA) using a typical 2,000 calorie diet. You may require more or less of a specific nutrient depending on your calorie requirements or if you have a medical condition. (For instance, it's advised that those who follow a heart-healthy diet consume less sodium per day than those who follow a conventional diet.
