Chicken Cutlets with Sun-Dried Tomato Cream

This recipe shows you how to make Chicken Cutlets that are twice as good, even though a Chicken cutlet is only a Chicken breast that has been cut in half. The sun-dried tomatoes in this filling dinner meal serve two functions. The tomatoes are added to the cream sauce after the chicken has been sautéed in the flavorful oil it was packaged in.

    The Chicken

Thinly sliced chicken breasts, often no thicker than 1/4 inch, are known as chicken cutlets. We adore them here since they cook through in about 6 minutes and are occasionally referred to as "thin-cut." By cutting a chicken breast in half horizontally, you can create your own cutlets if you can't locate any to buy. If they are considerably thicker than 1/4 inch, you can pound them down until they are the correct thickness with a meat mallet or a small, heavy pot.

    The Sundried Tomatoes

Both dry and olive oil-packaged sun-dried tomatoes are available. Because they have a stronger flavour, we suggest using sundried tomatoes that have been packed in oil for this dish. We also prepare the sauce with some of the oil from the jar, which gives the food even more flavour. This saves time and money and cuts down on the amount of ingredients we need. You may also employ them if you have the dry, oil-free variety. Just replace the oil from the jar with 1 tablespoon of extra virgin olive oil.

    Can I Use Chicken Thighs?

Yes! A decent substitute for chicken cutlets is boneless, skinless chicken thighs. Make careful to properly trim the chicken thighs if you're using them (they tend to have more fat than breasts). Since chicken thighs aren't usually thin-cut, you can use a meat mallet or a small, heavy pot to pound them into thinner slices, or you can simply cook them for a little longer on each side until an instant-read thermometer inserted into the thickest section reads 165°F.

What to Serve with Sun-Dried Tomato Chicken Cutlets

These savoury chicken cutlets with sun-dried tomatoes go well with almost everything. Serve them over cooked spaghetti squash or zucchini noodles for a low-carb dinner. These taste wonderful over orzo or whole wheat spaghetti. A side of brown rice or farro as well as some toasted crusty bread to mop up any sauce leftovers would be great additions.

Chicken Cutlets with Sun-Dried Tomato Cream

    Ingredients

    • chicken cutlets weighing 1 lb.
    •
    • divided 1/4 teaspoon of salt
    •
    • 14 teaspoon divided of ground pepper
    •
    • 1/2 cup of sun-dried tomatoes packed in slivered oil plus 1 tablespoon of jarred oil
    •
    • 12 cup shallots, chopped finely
    •
    • 0.5 cups of dry white wine
    •
    • 1.5 cups thick cream
    •
    • 2 teaspoons freshly chopped parsley

    Directions

    Step;1
Add salt and pepper to chicken with a 1/8 teaspoon each. In a big skillet, warm up the sun-dried tomato oil over medium heat. Add the chicken and cook, stirring once, for about 6 minutes, or until it is browned and an instant-read thermometer inserted into the thickest section reads 165°F. Place on a platter.

    Step:2
Add shallots and sun-dried tomatoes to the pan. Cook for one minute while stirring. Add wine and turn the heat up to high. Simmer for approximately 2 minutes, scraping off any browned parts, or until the liquid has mostly evaporated. The remaining 1/8 teaspoon of salt and pepper, the cream, and any residual chicken juices are added while the heat is reduced to medium. Simmer for 2 minutes. Turn the chicken over in the pan once more to evenly distribute the sauce. Serve the sauce- and parsley-topped chicken.

A qualified dietitian uses an ingredient database to estimate nutrition information, which means it should only be used as a guide.

The recommended daily intake of nutrients is known as Daily Values (DVs). You can find out how much a serving of a certain item or recipe contributes to each of those total suggested quantities by looking at the percent daily value (%DV) stated on nutrition labels. The daily value is determined by the Food and Drug Administration (FDA) using a typical 2,000 calorie diet. You may require more or less of a specific nutrient depending on your calorie requirements or if you have a medical condition. (For instance, it's advised that those who follow a heart-healthy diet consume less sodium per day than those who follow a conventional diet.
